Ingredients:
- 2 apples (peeled, minced)
- 1 pomegranate (seeded)
- 2 green onions (minced)
- 1/2 lemon
- 1/2 tsp sambal Oelek (Vietnamese ground fresh chili paste) - this is pretty widely available but I'll try to figure out a substitute
Directions:
- Squeeze the lemon half over the minced apples and toss. This prevents the apples from oxidizing and browning before you are ready to serve.
- Toss in pomegranate seeds, green onions and sambal.
- Plate and serve! It will keep in the fridge for up to 24 hours but any longer and the freshness will quickly dissipate.
